Good Dee's Easy ArepasServings: 13Calories per Serving: 84Preparation:Tools: medium bowl, a spoon, a cookie dough scoop (hands work too!), a nonstickpan to fry, a spatula, and a plate with a paper towel on it to coolIngredients:3oz baby corn, chopped1oz chopped jalapeños1oz shredded cheese1 package Good Dee’s corn(free)bread mixsmall cup of wateravocado oil for frying (ideal for higher smoke point but butter can also be used)Instructions:1. Prepare a plate with paper towels for the cooked arepas to cool2. Heat avocado oil in frying pan over low-medium heat3. In a medium bowl, combine mix, chopped baby corn and jalapeños, and cheese4. Stir until ingredients are well incorporated5. Slowly add water until the batter can hold together when squeezed in your hand6. Scoop balls of dough or form with hands to the desired size, then flatten them intopatties; I used a cookie dough scoop for uniformity but the dough balls can beweighed too7. Place 2-3 patties into the preheated pan, making sure not to crowd them8. When the bottom is lightly browned, flip carefully9. Once both sides are golden brown, carefully place them on the plate to cool10. Repeat until all batter is used, and serve warm
These arepas can be stored in the refrigerator and warmed up in a pan or oven. They can also be frozen. Thaw overnight in the refrigerator and reheat as needed. I’m sure they’d even be good cold!
